The thermocouple is a custom design that hangs through the large diameter leg of the case holder to take continuous measurement of the temperature of the salt itself, not the pot walls. The case holder can be positioned to your preference and the thermocouple swivels freely 360° within the holder leg so that you can route the thermocouple wire any way you wish, keeping your workspace free and organized. The 80cm-long wire is easily flexible and covered with braided stainless steel wire to resist heat and abrasion. Takes all the hassle out of temperature measurement of your pot.
